Cake Stuffed Strawberries

Browsing the internet for yummy cake pictures... I came across these heavenly creations by Jasmine Fine of 1finecookie.com: (Click through for her web-site and recipe!)
Cupcake-Stuffed Strawberries
Thanks to Jasmine's creation (www.1finecookie.com), my next baking project consisting of making my very own cake-stuffed strawberries.

I started with half a sheet of funfetti cake mix.
 Crumbled it up!
Added some leftover, purple tinted, cream cheese frosting.
Cleaned a bunch of yummy, fresh strawberries.
Made little openings at the ends, and emptied out a small section in the centers.
Stuffed with cake mixture and covered the bottom half of the strawberry. I tossed them in the freezer after this for an hour.
Finally, dipped them in candy melts and decorated with nonpareils. Oh how yummy!

Dessert Table - Jasmine's 2nd Birthday

For my first dessert table ever, I was honored to do it for my lovely niece Jasmine.

Jasmine had a Minnie Mouse themed party, so my dessert table had to include bright pinks, yellows and purples. Because it was my first dessert table, I spent 2 weeks shopping for dishes and display pieces, as well as materials to create the different treats for the table. After hours of work in a tiny kitchen... here is the final outcome :)

Unfortunately, I had to share a table with a ginormous birthday cake, so I had to make do with the smaller than expected space, but it still looked great!
  • Giant Chocolate Cupcake with a marshmallow fondant covered bottom and strawberry icing on top with colored nonpareils, topped with a custom "2".
  • Chocolate Cupcakes with Oreo Chunks, topped with purple tinted cream cheese frosting and pink sparkles.
  • Funfetti Cupcakes topped with strawberry frosting and colored nonpareils.
  • Straweberry Cupcakes topped with chocolate frosting and white nonpareils.
  • White chocolate covered pretzel sticks.
  • Sweet Tart Jelly Beans
  • Starburst Smoothie Jelly Beans
  • Red Vines
  • Chocolate covered Oreos
  • Circus Animals
  • An assortment of rice krispie treats on sticks
  • Strawberry Cake Cones
  • Dipped Marshmallows

Over 10 hours of single man power and over 350 pieces of hand-made sweets, I accomplished my very first dessert table with a huge smile on my face and with hopes of doing many more in the future.
