So ... the lovely bought me the best cupcake book ever Vegan Cupcakes Take Over the World (VCTOTW) ... and i've only had it for less than a week and i've already baked two recipes from it! The recipes are all soo good sounding, and it comes with a bunch of variations for each recipe ... great thing is ... it is all vegan and imo, tastes a lot better! It's a great buy ... $16 at the store, or get it for cheap on amazon for $10.
The first one i made was the Basic Chocolate Cupcake recipe, but the Cookies & Cream variation.
The cupcakes are sooooo goood and moist! Making everything from scratch tastes sooo much better than store bought or pre-mixed packages. The buttercream icing is cookies and cream too! mMmM
Last night, I baked Rog's fav ... red velvet, or as VCTOTW calls them, Crimson Velveteen Cupcakes, with cream cheese frosting.
I brought leftover cookies and cream cupcakes to work yesterday ... co-worker said it was one of the best cupcakes he's ever had! yay! Rog loved the red velvet ... so we don't have to go searching for the red velvet cake mixes anymore ... <3
