True Blue Cupcakes ... Red Velvet's Cousin!
So ... I ran out of red food coloring, but had lots of blue ... what did I do? I made "blue velvet" vegan cupcakes instead of red. Rog said, "Call them True Blues". Haha. He loves red velvet. Well, I used the same amount of blue as I would've red, and well, they cupcakes came out sooo dark. But, they did taste really yummy. Topped off with cream cheese frosting and some blue sugar. yum!

Carrot Cake Cupcakes! & a Tofu House!
So, i made carrot cake cupcakes last Thursday... very, very yummy!!!! I used an entire carrot to make 5 cupcakes. They tasted pretty good! I through on a bit of the same cream cheese icing from the red velvet cupcakes i made earlier.
So ... went to Mike's last Friday night ... ate at a Tofu House at Yes! Plaza ... (yes! i said yes plaza, lol) ... was sooooo good ... so much yummy food for the price ... and I love all the small dishes you get with it.

So ... I am re-vamping this blog so it mainly talks about my love interests in cupcakes, cars and food.
So ... the lovely bought me the best cupcake book ever Vegan Cupcakes Take Over the World (VCTOTW) ... and i've only had it for less than a week and i've already baked two recipes from it! The recipes are all soo good sounding, and it comes with a bunch of variations for each recipe ... great thing is ... it is all vegan and imo, tastes a lot better! It's a great buy ... $16 at the store, or get it for cheap on amazon for $10.
The first one i made was the Basic Chocolate Cupcake recipe, but the Cookies & Cream variation.
The cupcakes are sooooo goood and moist! Making everything from scratch tastes sooo much better than store bought or pre-mixed packages. The buttercream icing is cookies and cream too! mMmM
Last night, I baked Rog's fav ... red velvet, or as VCTOTW calls them, Crimson Velveteen Cupcakes, with cream cheese frosting.
I brought leftover cookies and cream cupcakes to work yesterday ... co-worker said it was one of the best cupcakes he's ever had! yay! Rog loved the red velvet ... so we don't have to go searching for the red velvet cake mixes anymore ... <3
