October Cupcakes

I had a very busy October ... but still managed to make a few dozen cupcakes and experiement with my newest project ... cake balls!

Edible Tasty Prints

Just noticed that Edible Tasty Prints posted my AOK cupcakes on their website... woot!

Chocolate Tomato Cake with Strawberry Tomato Glaze

Yes, you read right ... a chocolate tomato cake with a strawberry tomato glaze.



Last Sunday, the Sur family had a 'Tomato Cook-Off' where we had to create appetizers, entrees, and a dessert using tomatoes. I came up with a chocolate tomato cake with a strawberry tomato glaze ... and boy was it yummy!

The pureed tomato in the cake actually made the cake a lot more moist and gave it a nice flavor ... not really a tomato-ey flavor, but a hint of flavor that was kinda indescribable but obviously there ... and it was a yummy flavor! As for the glaze ... the glaze had a very sweet, strawberry flavor with that kick of tomato. Oh it was so sweet and delish!

It felt like a chocolate-y type of day ...

I embarked on a afternoon of chocolate-y goodness. I baked a batch of Roger's fave ... cookies and cream cupcakes. Switched out the usual calling for canola oil with apple sauce. (I scored a huge jar of Mott's apple sauce in the clearance section at Albertson's). Cupcakes came out a lot more moist...I will probably make that a permanent switcheroo.
All deco-ed out with a schmear of vanilla icing and then covered with oreo crumbs.
Below are my trial run of chocolate mint cupcakes. I made the mint icing from scratch ... looks white in the picture ... it's actually a very light, minty green :) These came out a lot better than expected and will definitely add to my fave cupcake recipes.

Cupcake Pictures

Here are a few random snapshots I took with my phone throughout the past year.

Frostings opened up close to work and I decided to drop by. I had their coconut chocolate cupcake. Their cupcakes are huge and decorated beautifully!


Crumbs is one of my favorites. I love how they decorate their cupcakes, and I love their unique flavors and names. My favorites are their cookies & cream, red velvet, half baked, and twinkie. Too bad the closest one to me is in Beverly Hills ... so I always make a stop whenever i'm in the area.


Here are a few cupcakes I made for a garage sale last year. I made yellow cake with chocolate frosting and coconut shreds and cookies and cream cupcakes. I sold them for a quarter each and sold a few.

Cupcake Camp OC

So I didn't notice that I actually never posted this ... was sitting as a draft ... haha.

On August 1st, Roger, my little brother Griffin and I went to Cupcake Camp OC at the Atrium hotel in Irvine. There were cupcakes and cupcake enthusiasts EVERYWHERE! Even though the event was a little bit unorganized, Cupcake Camp OC was able to raise $9100 for El Pozo. Over 1,000 people attended, and there were over 5,200 cupcakes! Best of all, I won the cupcake eating contest :D

Ya ... I finished 23 mini cupcakes in about 2 minutes against 7 other people. T'was an experience ... but I felt like crap afterwards :-/ But I did win a bottle of wine and a few minutes of fame in front of hundreds of people :)
